It's amusing, a lot of my customers always ask me a question: what does the name Bettola mean? I always like to play on words: head to a "bettola" in Italy and you're likely to find a hole in the wall establishment, a family-run dive with mismatched glasses and rarely a menu to be seen, where the cook is also the waiter, busboy and maitre d', serving up whatever happens to be available in the back.
I remember when i was growing up i was always amazed by the simple convivial atmosphere, the simplicity, authenticity and immediacy of the place. No matter what, you always ended up having a good meal and a good time. In my restaurant, i do share with the namesake a stripped down simplicity, the clean, minimalist décor to the menu, celebrating beautiful products made right on site. I get a lot of inspiration on the spur of the moment, a new recipe is always a new discovery.
